Our Hard White Spring Wheat Flour is stone milled from Yukon grown whole grain Hard White Spring Wheat including all of the bran, endosperm and germ.
It has a very mild flavour that is associated with 'white flour', but is packed with the nutrition, fibre and vitamins you expect from whole wheat. The sweeter flavour, light colour and slightly higher protein content compared to Red Spring Wheat Flour, makes it a popular choice for baking breads, pizza dough, rolls and other recipes that require rise.
It is also an excellent choice for pasta or noodles as this variety contains the necessary proteins to build the gluten for a firm and elastic dough.
