Banana Barley Loaf

Makes about 16 slices.
Ingredients:
- 1 cup (250 mL) whole barley flour
 - ½ cup (125 mL) whole wheat flour
 - 1 cup (250 mL) sugar
 - 2 tsp (10 mL) baking powder
 - 1 tsp (5 mL) baking soda
 - 1/3 cup (75 mL) oil
 - ¼ cup (50 mL) applesauce
 - 1 tsp (5 mL) vanilla
 - 1 ½ cups (375 mL) mashed, ripe bananas
 
Directions:
- Preheat oven to 350°F (180°C)
 - Grease a 9 x 5” (2 L) loaf pan (or line with parchment paper)
 - Combine dry ingredients in a medium bowl. Set aside.
 - In a separate bowl, mix oil, apple sauce and vanilla into mashed banana.
 - Gently add banana mixture into dry ingredients until ingredients are just combined. Mixture will be lumpy.
 - Pour batter into pan.
 - Bake for 50 to 55 minutes until loaf is golden brown on top. A toothpick inserted in the centre comes out clean.
 - Allow to cool for 10 minutes.
 - Remove loaf from of pan and let cool on rack.
